PIC stated occasionally ROP packages puncture and will be re-sealed onsite. Advised PIC a variance is required for ROP processing. Advised PIC to discontinuing ROP unless a variance is applied for and approved. Discussed misting systems require an ASSE 1013 RPZ (reduced pressure zone) backflow. PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals ------- At the 3-compartment sink, observed a final sanitizer concentration of 300+ ppm chlorine sanitizer when measured with a chemical test strip. The manager stated the compartment had just been changed but a test strip was not used. Discussed that chlorine sanitizer levels should be maintained between 50-100ppm for effective and safe sanitization. PIC found concentrated bleach was being used and the sink was being setup with a recipe. Advised PIC to thoroughly mix the solution and test every batch. The PIC emptied the compartment and re-filled with sanitizer measuring 50ppm. Correct By: Corrected At Time Of Inspection
