Inspector's notes
Observed hand sink located near the 3-compartment sink with several deficiencies. The hand sink was without paper towels, the basin was filled and blocked with washcloths, and the hand sink itself was blocked by a storage cart. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision, and maintained accessible at all times. Facilities must be maintained in a condition that promotes handwashing. The manager cleared the hand sink and stocked the hand sink with paper towels at the time of inspection. Kitchen associate stated that the items have been there for two hours. Spoke with PIC and items were moved to a cooler to rapidly cool to below 41 degrees F. Discussed cold holding and time as a control for the items being held in an ice bath. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrective Action: Corrected at time of inspection.

Cheese sauce and cooked chicken tenders with internal temperatures between 65 degrees F and 70 degrees F were resting on the counter in the kitchen. Cook stated that the items had been there for about 30 mins. PIC directed that the items be placed into the cooler. Discussed cooling procedures with the PIC. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
