Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

It was determined that the ice bath was ineffective due to minimal ice level. Discussed approved cooling methods.

Observed sliced tomatoes in prep table #2 with an internal temperature of 46-48*F. According to PIC, tomatoes were prepped on 7/2 and on 7/3 and were instructed to move to upright reach-in cooler to rapidly chill. Temperature logs were provided at time of inspection and indicated unit was holding ambient temperature of 38*f within 2 hours prior to inspection. Corrective Action: Corrected at time of inspection.

Observed meat ball in microwave with an internal temperature of 115*F. According to PIC, meatballs were left in microwave for 20 minutes, unattended. Discussed importance of re-heating foods to proper temperatures rapidly prior to placing in steam wells for hot holding. According to person in charge, items had been in unit all day and were discarded at time of inspection. Also observed grilled onions, brisket, steak, tuna,pepperoni, salami with an internal temperature of 43-46*F. PIC stated food were restocked within the last hour and were placed on ice until unit can be fixed. Discussed importance of monitoring units to ensure temperature remains below 41*F.
