Observed a hose with a sprayer attached in the mop sink with an atmospheric vacuum breaker on mop sink fixture. Advised the PIC the hose w/ sprayer attached to the faucet with this type of backflow prevention device is prohibited (due to constant pressure). PIC took the hose off the faucet and says it will only be attached when in use. Corrective Action: Corrected at time of inspection.

Observed two speed racks with pepperoni pizzas in zones 1, 2, and three. Also, observed one speed rack with cheese pizzas in zone 2. The timers were not started on any of the speed racks. Person in charge stated the pizzas were placed in the racks approximately 90 minutes prior to inspection and started the timers. Corrective Action: Corrected at time of inspection.

Observed a direct connection from the mop sink faucet to the chemical dispenser. Faucet has an approved AVB installed, which has been under pressure whenever water supply is on. PIC removed the hose connecting the chemical dispenser to the faucet. Chemical dispensers and other equipment are required to have a separate, dedicated water supply line. Emailed the plumbing handout. Corrective Action: Corrected at time of inspection.

PIC will leave the hose for the dispenser disconnected to prevent the failure of the AVB (backflow preventer) that is installed on the mop sink faucet. The copper line in the mop sink area may be a water supply line, which can be modified to supply the chemical dispenser with water, which must have a dedicated water supply that does not have an installed backflow preventer. Emailed the chemical dispenser handout.
