**2nd consecutive violation** Observed custard mix holding in custard making machines with internal temperatures ranging from 49-59*F when measured with a probe thermometer. According to person in charge, custard machine is supposed to keep custard mix at 41*F and below, and custard had been holding in the machine for about 3 hours. All TCS (time and temperature controlled for safety) food must maintain temperatures of 41*F and below. Custard machine was started at time of inspection to immediately freeze mix. Corrective Action: Corrected at time of inspection.

Observed chocolate custard liquid holding in the top of the custard machine with an internal temperature of 50-53*F when measured with a probe thermometer. According to person in charge, custard mix is loaded into the machine and sits for up to an hour before being frozen into frozen custard. All TCS foods must maintain internal temperatures of 41*F to prevent pathogen growth. Machine was run at time of inspection to freeze the custard. Corrective Action: Corrected at time of inspection.
