Inspector's notes

Observed a small pool of water forming below the main steamer on the cookline, resulting from a leak at the discharge pipe behind the unit. Discussed routine maintenance with PIC. PIC was able to submit a work order to address the issue at time of inspection. Staff mopped and sanitized the area during the inspection. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Repeat Violation Observed fettucine pasta in metal bin actively cooling in walk-in cooler with a temperature of 70-73*F, tightly sealded with plastic wrap and stored next to bins of already cooled foods at 41*F. Person in charge stated pasta was prepared 2 hours prior to inspection, placed on top shelf and removed plastic wrap from corner of container. SECOND CONSECUTIVE VIOLATION 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Grilled chicken breast tightly sealed in plastic storage container, date marked 8/21, with an internal temperature ranging 44-46*F. Person in charge stated the chicken was cooked yesterday and was placed in an active state of cooling over 6 hours prior to inspection. Cooling process should be completed in a total of 6 hours. Foods should reach an internal temperature of 70*F or below within 2 hours of reaching 135*F and within 4 hours of reaching 70*F temperature should reach 41*F or below.
