Observed the following TCS food items above 41'F stored in the top and bottom portion of the prep table on the main cook line using a probe thermometer: individually wrapped (cooked) quinoa 47-49'F, ricotta pancake mix 50'F, buttermilk pancake mixes 45-47'F, a bag of arugula 57'F, a container of arugula 47'F, an open container of oat milk (with a refrigerate after opening statement) 45'F. PIC discarded the quinoa and arugula at the time of inspection. All other items were moved to the walk-in cooler to rapidly cool. Prep cooler had an ambient air temperature of 44'F. Establishment has adequate refrigeration. Establishment will utilize the other refrigerators/prep coolers until this prep cooler is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed a container of cut tomatoes in the top portion of the cooler with an internal temperature (using a probe thermometer) of 57'F and a large container of pico de gallo stored in the bottom of the prep cooler. Per PIC these items were prepped and were directly placed in the prep cooler. Discussed cooling TCS foods in the walk-in prior to putting them in the prep cooler. PIC moved these items to the walk-in cooler to rapidly cool. Corrective Action: Corrected at time of inspection.
