***3rd repeat violation*** Observed neither employee had their food manager certificate. Per employee the owner and his wife, who were not present during the inspection, have the certificate. Inspector to send via email, the website where employee can get certificate, so a certified food protection manager is in the establishment whenever its open and operating. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed a pan of raw chicken on top of a pan of raw pork and above a box of raw beef. Employee moved the pan of chicken at the time of inspection. Also observed in the cold holding prep table raw eggs in the shell behind cooked bacon. Had employee switch items so the raw eggs would not be passed over the bacon. Foods shall be stored according to their final cooking temperature, with raw chicken on the bottom, or at the front of prep tables, and ready to eat foods at the top of the shelf. Corrective Action: Corrected at time of inspection.
