Observed facility is cooling on the counter when air temperature is 90F, and covering the pinto beans that are at 90F. Manager said beans had been there for 1 hour, and removed the lids and talked about cooling techniques. Emailed owner cooling techniques in Spanish as well. Manager added food to walkin. Ensure foods are cooled in thin pans and no lid, and placed in walkin quickly after cooling. Ensure that cooed foods get from 135F to 70F within 2 hours, and from 70F to 41F within 4 hours, for 6 hours total. Corrective Action: Corrected at time of inspection.
