Observed employee putting containers of hot foods from hot holding machine into a prep fridge to cool. Foods were in deep containrs and at 140-150F. Talked to staff about cooling techniques. Manager put foods in ice baths to cool down. Talked to staff about cooling techniques, blast chillers, and a walkin. Ensure that cooling foods get from 135F to 70F within 2 hours, and from 70F to 41FF within another 4 hours, for 6 hours total. Corrective Action: Corrected at time of inspection.
