Inspector's notes

Observed water from hand sink not reaching hot temperature. Per PIC when arriving to open the restaurant, they noticed a leak from the hot water heater and called for maintenance. Maintenance stated it was a broken part and had to leave to acquire a new part. Hot water temperature registered at 97*F with internal probe thermometer from the handwashing sink and the three-comp sink. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Instructed PIC to begin boiling water to be used at the three-comp sink to provide adequate rinse temperature for dishes until hot water is restored. Correct prior to 24hr re-inspection on 10/2/24.
