Inspector's notes

Observed TCS food being held in a line prep-unit with an internal temperature of 45-47*F. Internal temperature registered with internal probe thermometer. Per PIC all food items were placed in unit at least a day before time of inspection. TCS food items included eggplant hummus, traditional hummus, and feta hummus. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrected at time of inspection.

Inspector's notes

Observed hummus in prep unit with an internal temperature of 45-48*F. Internal temperature registered with internal probe thermometer. PIC stated the food had been in cold holding prep unit for less than 2hrs. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed hot steam from nearby hot holding unit blowing onto open containers of cold holding food. Educated PIC that when not in use, all cold food items should be kept covered to prevent hot air from nearby unit warming the food. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
