Observed a three-compartment sink with food contact surfaces soaking in Chlorine sanitizer with a concertation of >100ppm. Educated PIC that all sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC relocated all food contact surfaces to be rewashed, rinsed, and properly sanitized. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrected at time of inspection.

Observed 25ppm of chlorine sanitizer at the three compartment sink that was actively sanitizing dishes. PIC stated that the sanitizer solution had just been changed out after lunch. PIC added more bleach to the solution and retested using establishments test strips. New solution tested at 50ppm of chlorine sanitizer. Dishes were replaced into the sink to re-sanitize. Ensure the chlorine concentration is between 50ppm- 100ppm for active sanitizing of dishes. Correct By: Corrected At Time Of Inspection
