Observed the second from the right external wall air conditioning unit leaking water through the wall and down into the walk-in above cans of beverages. Instructed PIC to move the beverage cans that are being splashed by the water and do not move them back until the problem has been fixed. PIC instructed staff to move the cans; cans were moved at time of inspection. Corrective Action: Corrected at time of inspection.

This includes soda nozzles, tea dispenser nozzles, tongs, rollers, and trays used in food preparation. Reviewed with PIC and employees how to set up a three-compartment sink and use the test strips to ensure that the sanitizer is at an approved concentration. Discussed the importance of sanitizing dishes properly.

Inspector's notes
In the walk in cooler near the entrance, observed cows milk (regular, chocolate, strawberry, protein drinks), hotdogs, tornados (beef), creamer (dairy), burritos (bean), packaged boiled eggs, and packaged sandwiches having internal temperatures of 51-55*F. Portion of the walk in cooler near the entrance had an ambient temperature of 51*F. Person in charge states these foods had been in the unit since the night before. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
