Observed no soap at handwash sink in the kitchen. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Observed a large trash can placed in front of the hand washing sink and one utensil stored inside the hand washing sink, hand washing sink was not accessible at time of inspection. This establishment uses time as control for cooked pork, cooked beef, cooked shrimp, raw pooled eggs, raw cabbage, raw cabbage, raw. Observed no time stamp for above food items. Manager stated the above food items were taken out about 30 minutes prior to inspection. Reviewed the time as a control policy with manager. Manager put time stamps on above food at time of inspection. Corrective Action: Corrected at time of inspection.

Manager stated above food were prepared between one day but less than 3 days prior to inspection. Reviewed date marking parameters with manager. Cooked chicken was still in the appropriate time/temperature for cooling but was moved to a different cooler to cool down more efficiently. Discussed the importance of cooling all foods in the walk in cooler or standing cooler to ensure proper cooling is achieved. Corrective Action: Corrected at time of inspection.
