Inspector's notes

Observed the following food items cold holding at internal temperature of 51-53 deg F on the left side of the reach in sandwich preparation line that was holding >41 deg F. Lettuce, tomatoes, spinach. Observed Deli turkey, assorted cheese (pepper Jack, provolone, white) cold cut combo, deli ham and chicken strips and tuna 45-50 deg F for the sandwich preparation cold unit for the right side. Observed the following food items cold holding at internal temperature of 52-57 deg F in a walk-in unit that was holding >41 deg F. Chicken strips (assorted varieties) American Cheese, meat balls, rotisserie chicken, lettuce, ham, turkey, provolone, salami, roast beef, cut leaf lettuce. Manager informed the food items had been in unit since the night prior and discarded. Corrective Action: Corrected at time of inspection.

Observed the left side of the reach in cold unit on the reach in sandwich line holding temperature at 62 deg F and the right side of the reach in sandwich preparation unit holding temperature at 47 deg F and the walk-in holding temperature at 56.1 deg F (according to the min/max thermometer) TCS food items cold holding in unit was discarded or redirected to walk in freezer. Will re-inspect. Corrective Action: Correct prior to re-inspection.
