Observed silicone trays of RTE steak, chicken and rotisserie chicken holding with internal temperatures ranging from 46-54*F when measured with a probe thermometer. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Advised PIC to store "boats" in covered containers or in single layers to ensure adequate temperature control. PRIORITY VIOLATION-3-101.11, P: Safe, Unadulterated and Honestly Presented.-----Observed establishment storing spatulas in bucket containing 200-400 ppm quat sanitizer. During inspection, observed an employee remove a knife from a bucket and while the knife was visibly wet with quat sanitizer and begin cutting bread for immediate service. The bread was voluntarily discarded at the time of inspection. Reviewed storage of utensils between use with the PIC. Utensils between use may be stored dry and cleaned (wash, rinse, and sanitized) every 4 hours, may be stored in hot water above 135'F, or in running water. Correct By: Corrected At Time Of Inspection

Core-6-303.11, C: Intensity-Lighting ------- Observed a burned out light installed in the corner of the walk in cooler. Ensure there is at least 108 lux (10 foot candles) inside walk in coolers. Advised PIC to replaced bulb with one bright enough to illuminate all areas of the walk in to allow for proper cleaning. The manager stated that the bulbs would be replaced as soon as possible.
