Observed constant drippage from fan in walk-in freezer resulting in ice buildup. Drippage was not observed to make food contact but discussed it with person in charge to prevent any potential future contamination prior to repair. Discussed with person in charge the need of removal to prevent future contamination with potentially unsealed foods. Observed multiple TCS items (such as raw chicken and raw fish) with internal temperatures between 53-55°F in the prep unit by the cook line at the time of inspection. The Person in Charge (PIC) stated these items had internal temperatures between 38-39°F 2 hours before the inspection. Establishment will temporarily use Time as Control for TCS food in this unit until it is repaired. Establishment refrigeration is adequate. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
