Conducted via phone call. The Person in Charge (PIC) has requested to change from a Class 2 permit to a Class 3 permit. Oatmeal, soup, sandwiches, and salad will be added to the menu. Storage is sufficient and no other alterations are needed, based on observations from recent visit

In-person meeting to discuss menu expansion. The establishment is planning on adding oatmeal, soup, and sandwiches to the menu. Oatmeal will be prepared on-site and monitored by hot holding in warmers. Soup will be purchased pre-cooked, heated, and maintained by either hot holding or Time as Public Health Control (TPHC). Sandwiches will be assembled on-site and made with fully-cooked ingredients, fruit, and vegetables. Discussed possible need for an upgrade to a class 3 permit if the establishment prepares and cuts vegetables on-site. Discussed need for food labeling if sandwiches are individually wrapped and placed in a grab-and-go station. Reviewed cold holding capacities, bare-hand contact, cold holding, hot holding, TPHC, thermometer calibration, and food labeling. No County legal action will result.
