Inspector's notes

Measured temperatures of the pepperoni , cheese, and sausage pizzas on the bottom shelf of cold holding unit to at 49 F. Several TCS Sandwiches(smoked turkey and cheese , Italian style sub , and smoked ham and cheese) , on the fourth shelf were measuring between 44-46 F. PIC indicated that the food had been delivered by vendor on Friday 6/21. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed general grime and organic matter buildup inside floor drains at slurpee and soda machines front of house. Observed accumulation of food debris and trash under equipment in hot food area by POS, under milk shelf in beverage walk-in, and under fridges back of house. Also observed black organic matter buildup around perimeter of slushee machine. Clean and clean at a frequency to prevent buildup of dust, dirt, food debris, and other organic matter. 2nd Consecutive Violation Correct Prior To Next Routine Inspection Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed visible gap in bottom of emergency exit door in back of house. Observed plastic discharge pip sitting below flood rim of floor drain at slushee machine. And observed faucet to be not securely attached to hand sink in back room. Install weather stripping at back door. Cut plastic piping so there is at least a 1 inch air gap from flood rim of floor drain.
