Inspector's notes

Observed several metal pans and a couple of dicers/slicer parts that were all stored as clean at their respective clean dishes locations in the establishment. Upon closer observation of the metal pans and slicers, food residue was observed stuck inside of slicer parts and glue/sticker residue was observed stuck on the inside and outside of metal pans. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Person in charge notified a repair technician who had arrived to service the units by the end of inspection. The 3 compartment sink was manually set up to sanitize dishes. Thermometer was calibrated on site. The door for the unit had been accidently left open on the unit for the past 30 minutes.
