Predefined Comment: PIC provided hand drying provision for handwash sink at time of inspection. Predefined Comment: Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Prep cooler found with internal ambient temperature of 54-55*F. TCS food items, such as cheese, lettuce and tomato, in the cooler were also found with internal temperatures of 49-52*F. PIC stated the cooler was last known to have an ambient temperature of below 41* at 4:00 AM and the foods were placed in the cooler around 6-7 AM. PIC discarded the TCS food items in the cooler (see embargo form). The cooler will not be used for cold holding until it is able to maintain an ambient of 41*F or below. Burger cooler near prep cooler also found with raw hamburgers with internal temperature of 46-49*F. The burgers were placed in the cooler around 10:00 AM today and were moved to another cooler for cooling and continued cold holding. The lower portion of the burger cooler will be monitored to ensure it is able to maintain an ambient of 41*F or below before it is used for cold holding TCS food items. Please ensure cold held TCS food items are maintained at 41*F or below. Alternate coolers are avaialbe to continue normal operations. Corrective Action: Corrected at time of inspection.
