Employee wearing gloves touched doorknob to leave and return to kitchen, then continued to prepare food without washing hands/changing gloves. Employee wearing gloves handled dirty dishes then returned to food prep without washing hands. Had employee wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Peeled hard boiled eggs, yogurt, cottage cheese, shredded cheese, sausages, milks and salsa being removed from the service line and put back into the reach-in for later use at the time of inspection at 46*F to 54*F internally. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Reviewed temperature/ time requirements and provided a guide sheet for proper time control and TCS foods.
