Chef had staff remove from packaging at time of inspection. Discussed with Chef that all fish should be removed from its original packaging when thawing. At time of inspection, observed the dishwashing machine at 0 ppm while in use. Chlorine sanitizer must be kept in the concentration as stated on the bottle (50-200ppm). Until repaired, establishment will not use the dishwashing machine and instead use the 3 compartment sink for all dishes. Corrective Action: Corrected at time of inspection.

Observed romesco sauce with cooked chilis at 51-53*F, Feta Cheese at 54*F, cooked potatoes at 52*F, raw eggs at 53*F, and garlic butter at 54*F. All foods were in the unit less than 4 hours and were moved to the walk in cooler to rapidly cool.
