Observed heavy black grease buildup in the air vent directly above the high-temperature dish machine. Alerted the manager, who took a picture and plans to put in a work order to have the vents cleaned. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
