Reviewed approved storage locations for single-use items: single-service and single-use articles must be stored in a clean, dry location; where they are not exposed to splash, dust, or other contamination; and at least 15 cm (6 inches) above the floor. Inspector stopped employee, had them move the previously clean dishes to the dirty side to be cleaned again. Employee then washed their hands before continuing to work. Walk-in found with ambient temperature of 49-50*F upon inspector's arrival. PIC stated the cooler had been holding at 48*F since last night. Repair technician was onsite just before inspector's arrival. TCS food items in the cooler were found with internal temperatures between 44-48*F. Any TCS food item that had been in the cooler with internal temperature of 41*F or higher for longer than 4 hours was discarded (see embargo section). The repair technician was able to complete repairs while the inspector was onsite. Discussed possible use of reach-in, prep cooler, freezer, and ice for alternate cold holding when emergencies happen. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
