Observed chemical dishwasher dispensing 0ppm of chlorine sanitizer in final rinse. All chemical dishwashers must dispense 50-100 ppm of chlorine to ensure sanitization of food contact surfaces. Three compartment sink was filled with 300 ppm of quat sanitizer to sanitize dishes until the machine is fixed. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils.
