Observed canned peeled tomatoes draining liquid at room temperature with an internal temperature of 74*f. According to PIC, product is canned and held at room temperature. Discussed cooling in walk-in cooler or storing can in walk-in cooler to help cool rapidly ( within 4 hours). Tomatoes were moved to the walk-in cooler to rapidly chill.
