Observed shredded cheddar cheese stored at room temp with an internal temperature of 63*F. According to catering company, all food uses temperature instead of time as a control and discussed using smaller portions of cheese when needed to ensure temperature does not rise above 41*F while in use. Also discussed placing it in ice to ensure temperature stays below 41*f.

Observed lettuce mix with an internal temperature of 50-58*F on serving line. According to logs temperature is used as a control for food safety but initial temperature was not documented prior to inspection. Discussed importance of documenting receiving temperature to ensure cold foods are received at or below 41*F. Food is to be discarded at the end of lunch service.

Serving line does not have a sneeze guard protective barrier. Food is displayed on serving line at maximum capacity allowing students to reach over food. Discussed obtaining a sneeze guard to prevent food contamination from students.
