Inspector's notes

Observed food employee try and demonstrate the calibration of the pH meter and verification of the pH of the acidified rice, but did not how to do this procedure. Paper pH strips were used and showed the pH of rice measured over 4.4. Per employee the rice was cooked earlier this morning over 6 hours. Employee discarded acidified rice at time of inspection. Also observed log was not filled out for the day, for daily calibration of the pH meter and the pH for the sushi rice. Establishment must be able to demonstrate the calibration of the pH meter and verification of the pH of the acidified rice during any inspection, such that the pH is less than 4.1 upon initial acidification and the rice does not exceed 4.2 while held at room temperature. If the Regulatory Authority grants a Variance or a HACCP plan, the permit holders must comply with the HACCP plans and procedures that are submitted and approved as a basis for the modification or waiver. All procedures in approved variance/HACCP plan must be conformed to at all times. Corrective Action: Corrected at time of inspection.
