Explained to PIC, if the owner wishes to keep the RO system, then a RPZ (ASSE 1013) will need to be installed and can be used for the RO system. If the owner, wants to remove the RO system part of the water purifier then the establishment will not need a back flow device installed. Inspector will follow up at the next routine inspection.--- Discussed putting markers on the menu items under the consumer advisory.

Observed raw shelled eggs and raw beef stored above ready-to-eat produce (onions, carrots, ginger), and noodles located in the walk-in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

It does not have a backflow device and it can not be attached to hand wash sink. Inspector will follow up within a week to see what the establishment decides to do with the water purification.

Observed reduced oxygen packing cooked beef and chicken and other ingredients (pho) located in the reach-in freezer. Per PIC, the cooked beef, chicken, and pho have been in the ROP for 4 days unopened. PIC opened the ROP bags at time of inspection. A variance/HACCP must be obtained prior to conducting any specialized processes.
