Observed dough spreader with a mat attached with metal clamps to the bottom and top of the dough spreader. The mat had visible pieces of material coming off at time of inspection. PIC could not remove mat with clamps at time of inspection; a re-inspection will be conducted. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Corrective Action: Correct prior to re-inspection 9/22/2025.

Observed large plastic container of boneless wings in the prep table reach in cooler with a use by date of 11/5. Observed a small plastic container of anchovies in the prep table reach in cooler with a use by date of 11/1. All Ready to eat/time and temperature control for safety (RTE/TCS) foods past 7 days of preparation were discarded by PIC at the time of inspection.
