Observed 2 full gallons of milk cooling in reach in refrigerator at a temperature of 53*F. Person in charge stated they will use milk pitchers to portion milk for proper cooling and will discard if temperatures are unable to reach 41*F within 2 hours. Discussed usage of milk pitchers for every meal service. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Various milks, whole raw eggs, raw chicken, mayo, and ranch in reach in refrigerator with an internal temperature of 47-54*F. Person in charge mentioned foods were placed in the unit over 4hrs prior to inspection. Various milks are held above 41*F (in and out of the refrigerator) for a total about 6 hours without temperature control. All cold temperature controlled foods should be held at 41*F or below. Person in charge removed all foods noted from unit and set aside for discard. Recommended checking temperature before utilizing refrigeration units, keeping foods on ice during prep/service, and placing foods in refrigerators in between tasks. All foods left over after service must be discarded if requiring refrigeration. Owner to provide work order invoice of maintenance to unit once completed. Re-Inspection to occur by 8/22/2023.
