PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. -- Observed various TCS foods including: provolone cheese, pepper jack cheese, cheddar cheese, roast beef, roasted turkey, and tuna placed in prep top cooler with internal temperatures ranging from 49°F-52°F using probing thermometer. The person in charge (PIC) stated all foods were removed from the walk-in refrigerator and placed in the cooler approximately an hour prior to the inspection (2:30 PM). At the time of inspection, the PIC removed all TCS items from the prep cooler, placed them in the walk-in refrigerator to rapidly cool, and instructed employees to use the other prep top cooler until the unit can be repaired. Ensure TCS foods are maintained at 41°F or less. Correct By: Corrected At Time Of Inspection
