Observed breaded chicken 46*F, noodles 48*F, yogurt 46*F, portioned mint and tamarin sauces at 47*F in small sandwich prep cooler near walk in cooler. Cold hold of food to be 41*F or lower. Items were discarded. Observed diced potatoes and cut tofu in sandwich prep cooler at 43*F. Items were placed in walk in cooler to cool back to 41*F. As per staff, items were cut less than 60 minutes prior to inspections Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed two door sandwich prep cooler next to walk in cooler with an internal ambient temperature of 53*F Cold hold refrigeration must be kept at a temperature that can keep food at 41*F or lower. Staff have called for repair. Temperature control for safety foods were placed into walk in cooler to chill. Ice bath may be used for some ingredients during busy portions of the day. Corrective Action: Correct prior to re-inspection. Reinspection to be completed on or before September 4, 2024
