Observed cooked noodles and vegetables packaged for retail, measuring at 77 degrees F internally. The product was prepared 1.5 hours prior to inspection and was intended to be sold cold. The product was packaged in an airtight container. Instructed PIC to remove the product from packaging and properly cool for placing back in package. Discussed cooling methods and not placing TCS products for resale until the product has reached 41 degrees F.

Observed steamed corn packaged on site at 60*F. As per the staff. Corn was fished steaming at 2 hours prior to inspection (8:45am). When cooling hot foods, product must be cooled from 135*F - 70*F within 2 hours and from 70*F - 41*F within an additional four hours. Product was placed in walk in freezer and cooled to 41*F by 12:00 pm. Advised staff that foods must be cooled to 41*F prior to wrapping and placing out for display. Corrective Action: Corrected at time of inspection.
