Observed the handwashing sink nearest the front without soap available. Alerted the manager who obtained soap for the handwashing sink at time of inspection. Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Handwashing sinks to be ALWAYS maintained unobstructed and accessible. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed rehydrated rice-noodles (73°F) sitting out at room temperature. Staff stated they got the shipment of rice noodles 3 hours prior, and they were thawing the rehydrated noodles from frozen on their counter. Staff moved the noodles to the walk in and covered them in ice to rapidly chill. Discussed proper thawing methods with staff. Thawing must occur in a temperature-controlled fashion either under cold running water, under refrigeration, or as a part of the cooking process. Corrective Action: Corrected at time of inspection.

Observed chemical dish machine in use and not dispensing chlorine sanitizer. PIC not able to get the machine functioning properly and dispensing chlorine sanitizer to measure between 50-100ppm. The three-compartment sink will be utilized for sanitizing dishes until machine is in good repair. Discussed the use of test strips to ensure machine is sanitizing dishes. Corrective Action: Corrected at time of inspection.
