Cooked pasta in sealed zipper bags measured 79-85 degrees F in walk-in cooler. Items had been prepared about an hour prior, bags were opened at time. Additionally, ham and cheese Danishes being stored on baking tray in front area measured 68 degrees F. Items were cooked nearly 2 hours prior and were moved to walk-in cooler at time. Please ensure food items are cooled in shallow, uncovered containers, inside closed cooling equipment to ensure cooling times are achieved (135 to 70 degrees F in 2 hours - 70 to 41 degrees F in 4 additional hours - 6 hours maximum). On the top of the food prep cooler, observed boiled eggs at a temperature of 46-60*F. Foods were stored over the load line of the pan. Foods were placed in the unit 5 hours prior. Eggs were embargoed. In the front reach in cooler by the espresso machine, observed milk at 48*F, half and half at 49*F, and butter chips at 53*F. All foods had been in the unit longer than 4 hours and were embargoed. In the display case, observed a cheesecake dessert at 50*F. The two desserts that were in the unit longer than 4 hours were embargoed. The one that was placed in the unit less than 4 hours was moved to the walk in cooler to cool.
