In the display case in the front of the store, observed a tray of cheese cakes at 57*F and a fruit arrangement with honeydew at 57*F. All temperature controlled for safety (TCS) foods in cold holding are required to be kept at 41*F. Fridge was holding at 57*F on inspectors min/max thermometer. Foods were placed in unit 1-2 hours prior and were moved to walk in cooler to cool. Correct By: Corrected At Time Of Inspection,Repeat Violations: 2nd

Observed 2 bouquets of fruit, including cut melon, holding at a temperature of 53*F. Per manager, the bouquets were made and placed in the unit between 30 min to an hour prior. Bouquets were moved to the walk in cooler. All temperature controlled for safety (TCS) foods must be kept at 41*F. Unit was holding at 53*F. Unit was set too high and was turned down below 41*F.
