Inspector's notes

In the cook's line cold table, observed medium metal pan of pico and a medium metal pan of cooked peppers and onions with an internal probed temperature range of 50-52 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Person in charge (PIC) stated unit is being repaired and items have been in unit for 2 hours. PIC will implement 4 hour time as a control for TCS items until unit can be repaired and updated time for TCS items at inspection. Corrective Action: Corrected at time of inspection. Corrective Action: Corrected at time of inspection. Cut lettuce and pico de gallo double-panned in the top of the cook line cold table at at 47*F and 46*F internally. PIC stated items had been stored as such less than two hours.All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
