All foods observed at 41*F or below but with an inadequate ice bath setup. Advised PIC to completely surround TCS foods with ice and to ensure ice levels are as high/higher than the level of food. Advised PIC they may also utilize their existing TAC policy until repairs are completed.

Inspector's notes

Observed RTE sausages holding between 109-133*F in uncovered, double-stacked pans in the steamer. Per PIC, the sausage was cooked this morning around 8am and us usually covered with a lid. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed an ambient air temperature of 50*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 48-50*F on the inside and 48-62*F on the top. On the inside, observed roast beef and turkey slices. On the top of the cooler, observed pickles red onions, cooked corn, pico, sliced tomatoes, sliced cheese, and ham holding out-of-temperature. Per PIC, all foods were logged in compliance at 9:30am on their computer system. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Advised PIC to utilize other cooling units, time as a control or ice baths until the unit is repaired. Corrective Action: Corrected at time of inspection.

Discussed that when changing tasks that the soiled gloves must be removed (if being used), and hands must be properly washed before applying new gloves or returning to work. PIC stated the foods were on time as a control but no time stamp or log was present. Discussed that when time as a control is used, foods must be used or discarded within 4 hours and cannot be cooled down, reheated or otherwise repurposed. PIC stated the potatoes and eggs were recently replenished and the butter had been out since 7am. No timestamps were observed in the electronic log for the earlier batches. PIC provided timestamps for the time controlled foods at the time of inspection. Advised PIC to utilize fresh bowls for TAC pasteurized eggs unless eggs are all from the same batch.
