Inspector's notes

Observed TCS foods such as milks and cheeses in walk-in cooler at temperatures between 48°F and 59°F PIC stated the walk-in had been left open while transferring items into the walk-in cooler. After one and a half hours, the temperatures had not gotten closer to 41°F and TCS ingredients were moved to various functioning cold holding units in the facility. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Per Person in charge (PIC), the tomato sauce was cooked 2 hours prior to inspection. The tomato sauce was reheated to 165'F at the time of inspection to restart the cooling process. Cooked foods must be cooled from 135-70'F in the first 2 hours and from 70-41'F in the next 4 hours for a total of 6 hours of cooling. Discussed the importance of proper cooling with the PIC.
