Observed deli ham slices, deli turkey slices, sliced raw tomatoes, sliced lettuce, cooked eggs all in prep containers stored in the bottom half of cooling table located in the sandwich prep area. Large quantity of cooked breakfast sausage patties and a large open package of deli turkey slices also in bottom half of cooler. Employee explained prepped items will most likely be used today. Discussed the importance of datemarking all TCS food that has potential to be stored longer than 24 hours, such as large quantities. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made at time of inspection. All RTE/TCS foods were properly date marked at the time of inspection. Corrected at time of inspection.

Informed PIC that the dough should be contacting the inside of equipment and other food service containers, as they have not been sanitized and are not cleaned. Informed PIC that the dough needs to be discard. PIC discarded the dough at time of inspection. Dough was embargoed. Suggested to PIC getting a large metal bowl or large food-grade plastic bags to protect the dough from coming into contact with equipment. Corrective Action: Corrected at time of inspection.

Observed eggs cooling in the reach in refrigerator with the top completely sealed with plastic wrap. Informed PIC that anything cooling need to be uncovered or loosely covered to facilitate proper cooling. The wrap was lifted at time of inspection to allow for proper cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Informed PIC that these utensils must be washed, rinsed, and sanitized at least every 4 hours. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Informed PIC that insecticides/pesticides cannot be stored on premise because they are a food establishment, and if services are needed, they need to be applied by a certified applicator. Informed PIC that these tablets cannot be used in the establishment, because it is an open toxic chemical. Informed PIC that the chemicals need to be removed and cleaned up. Observed eight boxes of latex gloves stored above the baking prep table in the back right of the kitchen. PIC stated that the bakers use them when working with the dough. Informed PIC that latex gloves are not approved for use in handling food in Maricopa County and that vinyl or nitrile gloves can be used instead, like the ones used in the front of house. PIC removed the gloves from the back baking station and placed them to be removed from the premises. Latex gloves are not approved for food handling. Observed broken/split tiles on the kitchen floor, causing the ground to be bumpy and catch debris. Observed tiles popping off the wall on the wall-floor juncture in the back kitchen. Informed the PIC that the tiles on the wall and floor need to be replaced so that the surfaces can be smooth and easily cleanable. Observed yellow/brown build up on the wall in the back right corner of the kitchen. Observed an accumulation of food debris underneath equipment in the front prep area and back kitchen space. Informed PIC that the floors and walls need to be cleaned at a frequency which prevents the accumulation of food debris and build-up. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Physical facility must be maintained in good repair at all times.
