Observed opened gallon of milk and opened can of nacho cheese at 49*F -50*F inside prep table. Unit observed with ambient air temperature of 52*F. Per PIC, milk had been in prep table overnight. Nacho cheese had been opened and placed in prep table 3 hours prior. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Milk was discarded by PIC at time of inspection. Nacho cheese had been relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

PIC started cleaning all dirty surfaces at time of inspection. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Informed PIC that the snow cone machine cannot be draining into the sink and needs to be removed from the edge of the sink. The machine needs to have its own drainage line draining directly to the floor drain or the drain port can be capped and the machine moved to the counter. PIC stated they would like to cap and move to the counter. Corrective Action: Correct prior to next routine inspection.

Observed no hand sink in the establishment, except for the rest room. Establishment serves TCS foods including nachos and ice cream. Establishment was approved with a hand sink near their three-compartment sink. PIC stated that they removed the hand sink to make room in the establishment. Informed PIC that a hand sink in the front of the establishment is required due to handling open TCS products; the rest room hand sink is not sufficient. The hand sink must be re-installed. Re-install hand sink prior to re-inspection. Corrective Action: Correct prior to re-inspection 01/15/2025.
