Cooked sausage patties found cooling in walk-in cooler with internal temperature of 72-75*F at 12:10 PM; temperatures verified with PIC's and inspector's calibrated probe thermometers. Prep sticker on the sausage pan cover stated they were place in the walk-in around 9:00 AM. PIC discarded the sausage patties. Please ensure cooling TCS food items are monitored and meet required temperatures and time frames. Corrective Action: Corrected at time of inspection.

Pipe covers damaged or missing on some pipes around mop sink and hand wash station in ware wash area.
