In the walk in cooler obserevd Marinara sauce at 50*F, shredded cheddar at 52*F, Cesar dressing at 51*F, dairy chipotle sauce at 51*F, trays of various sliced cheeses at 51*F, beef sticks at 53*F, blocks of cheddar cheese at 52*F, bleu cheese slices at 52*F. Foods that were in the unit overnight, were embargoed. All foods from the shipment 1.5 hours prior were moved to kitchen reach in. All cold holding, temperature controlled for safety (TCS) foods are to be kept at 41*F or below. Unit was holding at 50*F on inspectors min/max thermometer.
