Observed foods in prep station in front of flat top grill and frier with multiple TCS foods above 41F, minimum ambient temperature measured at 49F in right side and 46.4 in left side. Observed on right side, cooked penne at 49F, cooked chicken wings at 52F, cut lettuce at 48F, and cut tomatoes at 45F. Observed on left side container of ricotta at 45-46F, and cooked sausage at 46-49F. PIC reported all foods in prep station placed there at 10:00am this morning. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
