TCS foods (i.e. - hamburger, ham, shredded cheese) found at front counter make station at an internal temperature of 51*F; internal temperature of unit at 51*F. Cold holding of TCS foods must be held at an internal temperature of 41*F or below. Per PIC, unit temperature are monitored and earlier temperature reading was at 38*F approximately two hours earlier. ----------- PIC had food employee remove foods from unit and place in walk-in cooler for rapid cooling. Per PIC, service work order put in for unit. Do not use unit to house TCS foods for cold holding until unit can maintain TCS foods internally at 41*F or below.
