Observed prepackaged breakfast sandwiches containing egg and meat on a steel prep table at ambient temperature with an internal temperature of 65 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), sandwiches were removed from freezer and placed on table to thaw at 10:30am, 2 hours prior to inspection. The sandwiches were moved to a reach-in refrigerator to cool rapidly - inspector verified temperatures. Corrective Action: Corrected at time of inspection.

Observed employee actively washing dishes at three compartment sink at time of inspection. Establishment as observed using chlorine to sanitize dishes. Observed chlorine sanitizer at three compartment sink to be at 0ppm. Observed that bottle of chlorine was empty. PIC obtained new bottle of chemical and chlorine concentration was observed at 100ppm. Chlorine concentration must be between 50-100ppm for full and proper sanitization to prevent spread of pathogens. Correct By: Corrected At Time Of Inspection
