Inspector's notes

Observed packaged snack kits containing cheeses and hard boiled eggs with internal temperatures between 53-67 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control, all time-and-temperature control for safety (TCS) foods must be maintained at 41°F or below. Per person in charge (PIC), items were placed in refrigerated retail case several days prior to inspection. Refrigerated case was holding cold properly at time of inspection. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. See embargo form. Corrective Action: Corrected at time of inspection.
